Easy go to Recipe


I was thinking the other night what the heck am I gonna cook for supper tomorrow??  Our oven stopped working so it threw a curve ball into my plans.  After looking at a few recipes I stumbled on one that I hadn't made in a long time and it's super easy!  How hard can crock pot cooking be?

Chicken Salsa 

Put 3-4 chicken breasts in crock pot
Pour 16 oz. of salsa over top
Add 1 package of taco seasoning (I used a homemade recipe for taco seasoning instead)

Cook in Crock Pot on Low for 6 hours (Or if you don't have all day too cook, you can cook it on high for 2-3 hours 

Once its cooked shred the chicken and add one can of corn and 8 oz of sour cream (I use plain greek yogurt taste just the same as sour cream but healthier)

-I serve mine on top of crushed Tortilla Whole Wheat chips with lettuce, tomato, and shredded cheese. You can add any of your favorite Mexican toppings as well.

-You could also spoon the chicken mixture into tortilla shells and place on a baking dish and top with cheese.  Cook till cheese is melted.  






Homemade Taco Seasoning Mix
This is a good list to start with.  Adjust quantities to suit your own tastes.
4 T chili powder
2 T cumin
2 T paprika
2 T dried oregano
1 T onion powder
1 T garlic powder
2 tsp kosher salt
1 tsp black pepper
1/2 tsp cayenne pepper

Mix all ingredients together and store in an airtight container.  Add 3 level tablespoonfuls of the mix and 1/2 c of water to 1 lb of ground beef or turkey that has been cooked with 1/2 diced onion.  Stir well and let simmer a bit for the spices to rehydrate, distribute, and the water to evaporate.  Taste for seasoning and add salt if needed.

Keeping Track and Staying Motivated

One thing I have ALWAYS struggled with is keeping motivated with my workouts. I was always the one who would make it a couple weeks into a program then stop! I would get to that lovely rest day and then that was it. I would not workout at all and then the next day would come and I would skip that day. And would just keep skipping till I had no motivation at all to continue. 

With that being said I've been looking and thinking of ways that I can keep myself going. And I found this neat way to do that on Pinterest! 
Numbering out each day and being able to take it down after each workout is a good way to keep going. This works really well with the 21 Day Fix since it's a 21 day program! But it would work great with any program or goal you may have! I would recommend with a 60-90 day program breaking it down into 30 days this way you don't get discouraged! 

Another thing I really like is having a visual of pounds to lose and pounds lost! Also you can add in inches (because inches are just as important if not more) and a reward jar for your hard work!  This is also another great motivator to keep you going when you start to see those pounds coming off! 


 As you can tell I LOVE the visual aspect of keeping track!  These are cute and simple things you can do. Find what helps keep you motivated and go with it!

Remember losing weight is a marathon not a sprint! Don't get down when you have a bad day. Get yourself up and keep going. Have faith in yourself. That's one of the biggest things that will hold you back from anything. Once you have that faith in yourself, you can move mountains!

Chocolate Shakeology Pie

Ok I can't be the only one with a sweet tooth?  I LOVE CHOCOLATE!  And I love  Chocolate Pie!  This is one thing my aunt makes for us every time we come home to visit!  It's one of my favorites so she spoils me cause this is the only time I ever have it.  But now that I have found a healthy version of Chocolate pie (made with Shakeology my favorite thing).....I don't have to wait till I go back home to Indiana anymore!  I mean this is amazing for my inner chocolate lover.  

Posted below is the recipe!  Hope you enjoy it as much as I did!  

Chocolate Shakeology Pie

-2 scoops Chocolate Shakeology
-1 container tofu, silken or firm (approx. 12 oz.)
-1/2 cup natural peanut butter
-2 Tbsp. skim milk
-1 premade pie crust (Whole Foods has whole-grain, graham cracker–like pie crusts that are great for this!)


Directions: Place peanut butter, tofu, Chocolate Shakeology, and milk in blender; blend until smooth and creamy, adding a bit more milk if necessary. Pour into pie crust and refrigerate until firm, at least 1 hour. 

(Makes 8 servings.)
Calories: 270 per serving

Healthy Plate/3 Tips for Healthy Eating


This is a perfect example of how your plate should look.  Keep your plate colorful.  You always want to see more veggies than carbs and meat. Have plenty of fruits through out the day.  They make for easy and yummy snacks as well.  Also make sure your drinking half of your body weight in water everyday.  Yes I'll be the first to say I STRUGGLE with this.  I'm lucky to reach my water intake for the day once a month sometimes.  But it's something I'm working on and I'm getting better at.

Here are a couple of tips to make healthy eating easier. 

Set yourself up for success!
  1. Simplify.  Don't make this any harder than it has to be.  Don't stress over counting every calorie that you eat.  Focus more on finding few healthy foods that you love and incorporate them into healthy recipes. The recipes don't have to be fancy at all.  Just keep it simple.  The most successful people at losing weight and keeping it off eat the same things over and over.
  2. Take Baby Steps.  Take it slow and add to it.  Don't change the way you eat over night.  Change a few things at a time.  This way you won't stop a few days later.  For example add a small salad to supper or cook with olive oil instead of butter. 
  3. Don't think of certain foods as "off limits".  You can have that piece of chocolate or pizza.  Just make sure you watch your portions.  Don't eat to much to often.  I love pizza so once or twice a month I will have a couple of slices but that's it.  So don't ban unhealthy foods you can have them just in moderation's.

Lift Each Other Up!


Today's Post is quit simple really! There's so much hate and negativity in the world today, so lets start today by being there for those people in need.  Sometimes all it takes is a simple smile to show someone you care.  Being nice to someone can help lift their spirits, where as being rude can just push them away. 

Never look down on someone unless you are helping them back up.  Be that bright light showing them the way from all the darkness and evil that is out there.  Show them you truly care about them and you want what is best for them!  

If we can try our best to do this daily, you might just help brighten someones day that needed it without even knowing!

Whats your "WHY"


Everyone has a "why" in life.  You might not realize it yet but you do.  Your why could be why you get up everyday and live your life.  It could be because of a family member.  It could be to become a better person.  It could be to become a healthier person.  There are countless of reasons why you would want to do anything! You just need to find that one thing you would never give up on. 

So today I want you to find your "WHY" in your life.  What is that thing that drives you everyday to get out of bed and push you toward that goal in life you have?  Once you know your "Why" then you  will find the courage to take the risks to get ahead, stay motivated, and move ahead in your life toward that goal.



My "Why" would be my son.  I don't think there's anything that I wouldn't do for him. I would go to the ends of the earth and back for him.  The day he was born I felt a love and a bond I had never felt before.   He is my little shadow who follows me around everywhere.  His smile lights me up every time I see it.  And his little giggle warms my heart.  He's the reason no matter what is going on I get up and push through.  I've had days where I didn't want to get up, but I knew I had to for him.  He needs me to be his mom and be there for him. 

Take sometime, sit down, and think about what makes me you click.  What makes you want to work harder than ever.  What or who you would never want to let down and fail.  Once you find that "Why" that drive deep down inside, it will push you harder than ever!

Boston Strong One Year Later

I just wanted to take a quick moment to remember what happened a year ago today.  I can't believe it has been a year already. In seconds/minutes a city and lives can be turned upside down. But when something terrible happens people pull together and become one no matter what differences they have.

Being in Boston a few weeks ago and seeing how the people there still have the same pride and passion was amazing! They still haven't forgotten nor never will! I have fallen in love with that city! They are and will forever be BOSTON STRONG!  

Here are 3 pictures I took from the Home Opener at the Boston Red Sox game.  These are some of the Boston Marathon victims who where honored during before the game.  They brought out the World Series Rings and shook every Red Sox player's hand before they got their rings.

Start off with a little bit about Me!

I'm a wife and mother to our adorable son! (Ok yes that's my opinion but hey every parent says that!) I grew up in a small town in Southern Indiana and I'm currently living in Northern Ontario Canada.  I became a Permanent Resident and moved here to be with my husband. A lot has changed over the last five years but I wouldn't change it at all because I know it all happened for a reason and God has a plan for everything. 

I'm a stay at home mom after my son was born last January and I love every minute. I love sports and to be outside. I'm a huge fan of Football, Baseball, Basketball, and Nascar.  I love playing and also watching Golf on tv.  I love being active and always have been since I was a little girl.  But over the years and after having a baby I gained weight.  I was tired all the time didn't feel good about myself at all.  I knew that not only for myself but also for my family I had to make a change and put my health first.  I want to be around as long as I could be for my family and the way I was eating and not working out wasn't going to work anymore.  That's when I found that drive to get myself back into shape and to one day hopefully help others get into shape for themselves and their families as well. 

So last August I joined a Beachbody weight loss group on Facebook.  I pulled out my Turbofire DVDs, ordered my first shipment of Shakeology and dedicated myself to them for those 60 days.  With the help of the people in the group, they kept me on track, and kept me going on days that I didn't want to do anything.  With the help of Shakeology and Turbofire I lost 15lbs after that 60 days. It was the jump start I needed to get my new health journey started. 

I'm still on this journey/life style change and I don't plan on stopping either.  After my start to this new life style I decided I wanted to help others.  So I signed up as a Free Beachbody coach to help/encourage others who want to End the Trend and become healthy! I like many other coaches out there are doing this because we care and want to help anyone we can get healthy and live long lives. 






I love this quote and its so true!  Stop saying "I'll start tomorrow."  Let's start today.  Don't put it off any longer.  I always said tomorrow, tomorrow, tomorrow, tomorrow.  Then like many tomorrow never came! But once I started I was so glad I did!  I still have a ways to go but I'll get there.  It's not a race, its a marathon.  Just take it one step at a time.  Yes we will fall but that's when we must learn to get back up and keep moving forward!
