I was thinking the other night what the heck am I gonna cook for supper tomorrow?? Our oven stopped working so it threw a curve ball into my plans. After looking at a few recipes I stumbled on one that I hadn't made in a long time and it's super easy! How hard can crock pot cooking be?
Chicken Salsa

Put 3-4 chicken breasts in crock pot
Pour 16 oz. of salsa over top
Add 1 package of taco seasoning (I used a homemade recipe for taco seasoning instead)
Cook in Crock Pot on Low for 6 hours (Or if you don't have all day too cook, you can cook it on high for 2-3 hours
Once its cooked shred the chicken and add one can of corn and 8 oz of sour cream (I use plain greek yogurt taste just the same as sour cream but healthier)

-I serve mine on top of crushed Tortilla Whole Wheat chips with lettuce, tomato, and shredded cheese. You can add any of your favorite Mexican toppings as well.
-You could also spoon the chicken mixture into tortilla shells and place on a baking dish and top with cheese. Cook till cheese is melted.
Homemade Taco Seasoning Mix
This is a good list to start with. Adjust quantities to suit your own tastes.
4 T chili powder
2 T cumin
2 T paprika
2 T dried oregano
1 T onion powder
1 T garlic powder
2 tsp kosher salt
1 tsp black pepper
1/2 tsp cayenne pepper
Mix all ingredients together and store in an airtight container. Add 3 level tablespoonfuls of the mix and 1/2 c of water to 1 lb of ground beef or turkey that has been cooked with 1/2 diced onion. Stir well and let simmer a bit for the spices to rehydrate, distribute, and the water to evaporate. Taste for seasoning and add salt if needed.
