Slow Cooker Pulled Pork BBQ

Slow Cooker Pulled Pork BBQ (21 Day Fix approved)
(21 Day Fix-1 red, 1/4 purple, 1/4 green, 1 yellow)
-1 pork loin
-1/2 cup unsweetened applesauce
-1/2 cup water
-1 cup onion
-1 cup mushrooms
-1tsp cayenne pepper
-1 tbsp garlic powder
-1/4 cup red win vinegar
-1/4 cup yellow mustard

-Combine the first 6 ingredients in a crock pot
-Cook on low for 7-8 hours
-Drain and shred pork.  Return to crock pot
-Stir in red wine vinegar and mustard (can add more for taste)
-Serve (1 red container) or 2/3 cups of pork on whole wheat bun or roll

Overnight Nutella Oatmeal

Overnight Nutella Oatmeal
1/4 cup- Uncooked Old Fashion Oats
1/4 cup- Skim Milk
1/4 cup- Plain Greek Yogurt
Half of an Banana cut up
1 spoonful of Nutella

-Add all ingredients into a jar. 
-Put lid on jar and shake well to make sure it is mixed well. 
-Place in refrigerator overnight. 

Quick and easy breakfast that doesn't need to be heated.  Just grab and go!

Cheesy Chicken and Green Chilies Lasagna

This right here is AMAZING! It has become a family favorite.  It was super easy to make and didn't take much time to put together either.  

1 1/2 cup-/Cooked and Shredded Chicken Breast
1 cup-Low Fat Mozzarella Cheese
1/2 cup-Softened Low Fat Cream Cheese
1/2 cup-Plain Greek Yogurt
1- 4oz can Green Chilies 
2 TBSP-Diced Jalapenos
1 tsp-Cumin
1 tsp-Chili Powder
1/2 tsp-Garlic Powder
1/4 tsp-Salt
4 Whole Wheat Tortillas

-Preheat oven to 425
-Mix together well chicken, mozzarella cheese, cream cheese, yogurt, green chilies, jalapenos, and seasonings together.
-Spray bottom of a medium baking dish with cooking spray
-Layer 2 tortillas on the bottom of baking dish
-Next layer half chicken mixture using a spoon or spatula
-Top mixture with the last 2 tortillas
-Layer last half of chicken mixture on top of tortillas
-Top with 2 TBSP with low fat shredded cheese
-Cover and bake for 20 minutes or till cheese is melted.

Live in the Moment!

I was reading my personal development last night and came across this.  Stop worrying about what the future will hold, what has happened in the past, & just live in the moment right now! Stop wasting time worrying and being upset over something you can't change. Be here in this moment. I find toady so many people live in the past and worry about the future.  But we miss what is right in front of us. We miss so many moments and let time get by. We have so many things to be thankful for. So just stop worrying for 1 minute and breathe. Be thankful for what you have and work toward what you will have in the future. Learn to live in this moment and this day because you won't get this day back! So make the best of it every day!

Guilt Free Reese's Cups

8 Tablespoons of Coconut Oil
16 Tablespoons of Shakeology
4 Teaspoons of Natural Peanut Butter

1) Microwave 4 TBSP of coconut oil for 30 seconds

2) Mix in 8 TBSP of chocolate shakeology.  Divide mixture and pour into 8 muffin tins.  Then freeze for 5 mintues.

3) Take the muffin tray out of the freezer and place 1/2 TSPof natural peanut butter on each Reese cup. Place back in the freezer for 5 mintues.

4) Microwave 4 TBSP of coconut oil for 30 seconds

5)  Mix in 8 TBSP of chocolate shakeology.  Divide mixture and pour onto your Reese cups.  Then freeze for 30 minutes.

*Keep in either the fridge or freezer

Stuffed Bell Peppers

  Stuffed Bell Peppers

6 large peppers (I used multiple colors, it's whatever you prefer)
1 lb ground beef
1⁄2 cup chopped onion
1 (16 ounce) can tomatoes, diced
1⁄2 cup long grain rice
1⁄2 cup water
1 teaspoon salt
1 teaspoon Worcestershire sauce
1 cup shredded cheddar cheese

Cut tops from peppers; discard seeds and membranes.

Chop enough of the tops to make 1/4 cup, set aside. (I simply cut off the bottom of the pepper to make it stand better and chopped that up for the mix.)

 Cook the whole peppers, uncovered in boiling water for about 5 minutes; invert to drain well.
Sprinkle insides of peppers lightly with salt.

In a skillet cook ground beef, onion and 1/4 cup chopped pepper till meat is browned and vegetables are tender.

Drain off excess fat. Add undrained tomatoes, uncooked rice (or cooked rice from steamer bags) water, salt, Worcestershire, and a dash of pepper.

Bring to boiling, reduce heat. Cover and simmer about 20 minutes or till rice is tender. (If you use steamer bag rice it only takes about 8 minutes.)
Stir in cheese. Stuff peppers with meat mixture. Top peppers with a little extra cheese. Place in a 10x6x2 baking dish. (Or whatever dish you have handy that fits.)

Bake covered in a 350 degree oven for 30 minutes.

Postpartum Depression

Postpartum Depression/Anxiety was 2 words I didn't want to face or hear at all! I knew something was wrong. Knew I was off BUT I DIDNT want to EXCEPT it. I felt like a failure cause I couldn't take care of myself so how could I take care of my now family of four? My heart rate and anxiety levels would go up with just the sound of people coming in and out of the house or being out and about with the family. I couldn't eat and would cry more than Ayden did! But after I finally excepted it and talked to my doctor I got help and still am. If you know someone who's is suffering or if you are get help! I still hate to admit that I have this but I feel so much better now that I've gotten help!

You Got This

Another week of Cize is complete!  "You Got This" was a step up from Crazy 8's but its also a statement as Hey you do have this!  It might get harder but that's why we do it.  You aren't going to get better and improve if you stay the same and skip the hard stuff.  If you still aren't sure how much of a workout this is well let me tell you after doing this workout this week my abs were so sore!  I couldn't figure out why they were till I was doing this and realized Holy Crap this is why!  I'm getting a ab workout and I don't even realize it.  That's why I LOVE THIS!  I'm getting a workout in while having fun.

Here is another video of yours truly.  Yes it might not be pretty (I was dodging Thomas Toys and both my boys) but I got it in and I'm still going strong!!

Favorite Quick and Easy Breakfast

This is a go to breakfast in our household.  I usually make these once every couple of weeks.  My two year old loves finger foods, so they are perfect for him, and these are easy to warm up! They are even perfect for a quick on the go breakfast! Hope you enjoy them as much as we do!

Veggie Frittata with Turkey Bacon

1 - Package of Turkey Bacon
1 tbs - Vegetable Oil
1/2 cup - Chopped Red Pepper
1/2 cup - Chopped Green Pepper
1 cup - Chopped Mushrooms
2 cups - Egg Substitute or 8 Eggs
1/4 cup - Milk
1 tbs - parsley
1 cup - Low Fat Shredded Swiss Cheese  
1/3 cup - Green Onion

*Heat oven to 350°F. 
*Mist 12 muffin cups with cooking spray. Cook turkey bacon as specified on the package. Cut into ½-inch pieces and put aside. 
*In large skillet over medium-high heat the oil, then add the red and green pepper, along with mushrooms. Cook for about 5 minutes stirring occasionally or until vegetables are cooked.
*In large bowl, whisk eggs, milk and parsley until well mixed. Stir in bacon, cheese, mushroom mixture and green onions.
*Spoon mixture into muffin cups, filling them ¾ full. 
*Bake 20 minutes or until set.
*Let cool and Enjoy!

Chocolate Shakeology Pie

Chocolate Shakeology Pie

-2 scoops Chocolate Shakeology
-1 container tofu, silken or firm (approx. 12 oz.)
-1/2 cup natural peanut butter
-2 Tbsp. skim milk
-1 premade pie crust

  Directions: Place peanut butter, tofu, Chocolate Shakeology, and milk in blender; blend until smooth and creamy, adding a bit more milk if necessary. Pour into pie crust and refrigerate until firm, at least 1 hour. 
Calories: 270 per serving

Homemade Taco Seasoning

Homemade Taco Seasoning Mix

4 T chili powder
2 T cumin
2 T paprika
2 T dried oregano
1 T onion powder
1 T garlic powder
2 tsp kosher salt
1 tsp black pepper
1/2 tsp cayenne pepper

Mix all ingredients together and store in an airtight container.  Add 3 level tablespoonfuls of the mix and 1/2 c of water to 1 lb of ground beef or turkey that has been cooked with 1/2 diced onion.  Stir well and let simmer a bit for the spices to rehydrate, distribute, and the water to evaporate.  Taste for seasoning and add salt if needed.

Mommy & Me Workouts

I've started a new tab here on my blog of Mommy & Me Workouts that I've started doing with my three month old.  I'll be posting pictures of the little workouts I'm incorporating into mine.  They aren't time consuming and can be done whenever!  I usually pick one workout to do for the day and just add it in to my routine whenever I get a few minutes!  I'll post below the first one that I post in the tab!

Hold your baby tightly under their arms.  Hold them out in front of you. Then slowly lift them up then slow back down. Repeat this move 10-15 times three times a day.

Fun Fact Time!

A couple fun facts about Shakeology from the use to be sceptic!  I still remember when I first talked to my cousin about Shakeology. The first thing that stood out to me like anyone else is the PRICE! I automatically started saying NO WAY I would pay that for shakes. I can't AFFORD that!  No way this is worth it. But guess what once I seen the break down of the cost and realized for less than $5 a day I could do it. It's cheaper than eating out for lunch or breakfast everyday. It all comes down to how bad you want it?  People will spend hundreds of dollars on clothes/bags/shoes but when it comes to our health we put the breaks on and all the red flags of this cost to much pop up!  We've got to start putting our health first and make changes!  If you want to get in all your veggies in at once, have more energy, reduce the junk food cravings then this is for you!  Don't be like me and tons of other people who just look at the price and freak out! Crazy 8's Video

I said a week ago that I would post a video of me doing the week 1 workout called "Crazy 8's" and I finally got it uploaded on the computer and ready to post for you!  At first I was afraid I had lost it because I was going through my phone and cleaning out old pictures and I deleted the video!!!  But somehow I lucked out and emailed it to my husband (I don't even remember doing that either lol) So if your ready for a laugh then here it is! Hey in my head I felt like an amazing dancer but not so sure if I really look like one when I watch the video!  But I will say I really love this workout program.  Its so nice to get a good workout in and not feel like your working out.  And if you need a good pick me up and sometime to just laugh at yourself then this is it.  The first couple days of learning the routine for the week is full of laughing at myself for trying to get the steps right! It's a lot of fun and I hope you will join me!

My Story!

I was asked in my Coach group to tell MY story....I was the typical buy a workout DVD use it a week then stop. Went from one so called diet to the next. Even tried weight loss pills hoping for the magical pill that would make the weight fall off. It wasn't till after my first son that I asked my cousin about these "challenge groups" she was in and what this "coaching" thing was.  After my first group and actually finishing it I lost weight and inches! Felt like the old me again. Now after 2 kids I've jumped full force back into working out again. I love how Beachbody has changed me not only on the outside but also on the inside. In a better person and I'm paying to forward by helping others feel the same!  I love my "job" as a coach. Being in these "challenge groups" keeps me motivated and going even when I feel like giving up!

21 Day Fix Lasagna Roll Ups

I found this recipe and decided to give it a shot!  I always like to change supper up a bit and try something new every now and then.  So when I seen these, I knew I had to try them.  And they were really good.  My husband loved them and my 2 year old did as well!  Hope you enjoy them as much as my family did.

9 lasagna noodles (Whole Wheat or Whole Grain noodles), cooked
1 (10 ounce) package frozen chopped spinach, thawed and completely drained

1 (15 ounce) container fat free or light ricotta cheese  (I've also used 2% cottage cheese instead of ricotta cheese)
1/2 cup grated Parmesan cheese
1 egg
1/2 teaspoon minced garlic
1/2 teaspoon dried Italian seasonings
salt and fresh pepper(optional)

1 chicken breast, cooked and diced (I've even used lean Hamburger meat or minced Turkey meat as well) 
32 oz tomato sauce
9 Tablespoons part skim mozzarella cheese, shredded

Preheat oven to 350°. Make sure the spinach is drained well. Combine spinach, ricotta, Parmesan cheese, egg, garlic, Italian seasonings, chicken, and salt and pepper in a medium bowl. Pour about 1 cup sauce on the bottom of a 9 x 13 baking dish.
Place a piece of wax paper on the counter and lay out lasagna noodles. Make sure noodles are dry. Take 1/3 cup of ricotta mixture and spread evenly over a noodle. 


Roll carefully and place seam side down onto the baking dish. Repeat with remaining noodles.  Use remaining ladle sauce and over the noodles in the baking dish.  Then top each one with 1 Tablespoon of mozzarella cheese. Cover baking dish tightly with aluminum foil and bake for 40 minutes, or until cheese melts. Makes 9 rolls.

1 yellow 1 green 1 red 1 blue (or 1/2 blue depending on how much cheese you use) 1 purple 
2 roll ups equals one serving
