Favorite Quick and Easy Breakfast

This is a go to breakfast in our household.  I usually make these once every couple of weeks.  My two year old loves finger foods, so they are perfect for him, and these are easy to warm up! They are even perfect for a quick on the go breakfast! Hope you enjoy them as much as we do!

 
Breakfast
Veggie Frittata with Turkey Bacon

Ingredients 
1 - Package of Turkey Bacon
1 tbs - Vegetable Oil
1/2 cup - Chopped Red Pepper
1/2 cup - Chopped Green Pepper
1 cup - Chopped Mushrooms
2 cups - Egg Substitute or 8 Eggs
1/4 cup - Milk
1 tbs - parsley
1 cup - Low Fat Shredded Swiss Cheese  
1/3 cup - Green Onion

Directions 
*Heat oven to 350°F. 
*Mist 12 muffin cups with cooking spray. Cook turkey bacon as specified on the package. Cut into ½-inch pieces and put aside. 
*In large skillet over medium-high heat the oil, then add the red and green pepper, along with mushrooms. Cook for about 5 minutes stirring occasionally or until vegetables are cooked.
*In large bowl, whisk eggs, milk and parsley until well mixed. Stir in bacon, cheese, mushroom mixture and green onions.
*Spoon mixture into muffin cups, filling them ¾ full. 
*Bake 20 minutes or until set.
*Let cool and Enjoy!
